Hello, Kristof

Why go

An independent magazine, a cinnamon roll and a cold brew is the classic order here, and the café was built in roughly that order too. Hello, Kristof started as a magazine stand with coffee and grew into a Lisbon roaster with rooms in São Bento, Bica and Alfama.

Roasting in house, brewing by hand

The coffee programme is the strongest reason to stop. Beans are roasted in house from specialty-grade lots bought from sustainable farms and cooperatives, with Guatemala, Colombia, Ethiopia and Costa Rica named among the origins. The baristas are trained in advanced brewing methods, and espresso drinks sit beside manual brewing, so V60, Chemex and Aeropress are all there when a cappuccino or a cold brew is not the answer.

The food follows the same logic: a curated brunch menu, pastries, salty dishes, and vegan and vegetarian options, kept short enough to stay good. The house cinnamon roll is the item to look for, bold with cinnamon, crisp at the edges and neatly spiralled. Brioches sit beside it in the case for anyone who wants something plainer with the coffee.

Built for lingering

The founding story explains the room. A freelance graphic designer tired of working from home wanted a café where Lisboetas could pass the time with a laptop, and the place still runs on that idea, with lighter breakfast food added over time to the coffee and the magazines.

The room is minimalist, stylish and comfortable, arranged around a central coffee station. The crowd mixes people photographing latte art with people working steadily, the pace is come by and stay a while, and the service reads as family-like rather than transactional. Regulars and magazine browsers make up much of the room on any given morning, and the group has grown to three Lisbon addresses while keeping the identity the first one was built on.

Order the cold brew and the cinnamon roll

Start with drinks that show the coffee focus. Cold brew is the named order for a warm afternoon and cappuccino covers the espresso side; for a slower stop, choose V60, Chemex or Aeropress and let the brewing take its time.

For food, the cinnamon roll is the clearest pastry order, with brioches close behind and the salty dishes there when the visit needs more than pastry. Freshly roasted beans are sold in store, which is the easiest way to take the roasting programme home.
