El Injerto is the city shopfront of a Guatemalan coffee estate the Aguirre family has worked since 1874. The farm sits in the western highlands, where cloud forest and a set of distinct microclimates shape what the trees do, and its reputation was built on microlots, unusual varieties and a quality-over-volume approach.
The café turns that into something you can drink without a plane ticket.
