The brew list spans the traditional and the contemporary: phin coffee, espresso drinks, pour-over, siphon and cold brew, with manual filters through V60, Kalita and Chemex. Three floors, each with a different pace

Dream Beans is family-run and independent, with eight years behind it in the Old Quarter, and the room is compact and warm across three floors. The ground floor is the busiest, with bar seats facing the barista, and it is the place to sit if watching the brewing is part of the appeal.

Upstairs the pace drops. The second floor is quieter, the third calmer still, which makes it the place to step away from the noise of the city for an hour. The design is minimalist but inviting, the seating varied enough for unwinding, talking or working, and there is outdoor seating as well. Service is a consistent strength: warm, knowledgeable and happy to explain beans, methods and menu choices in detail.

Egg coffee first, then the pour-over

Egg coffee is the clearest introduction to the house's Vietnamese focus, and it is where a first visit should start. Coconut coffee is the other strength, especially iced. Vietnamese coffee with condensed milk and phin coffee keep the order rooted in local brewing tradition, while espresso drinks offer the contemporary route through the same beans.

Move to the single-origin pour-over after that. Manual brewing is what the café is most associated with, and V60, Kalita, Chemex and siphon each show Vietnamese beans in a different light beyond the milk-based signatures.
