Why go

Three ingredients, one bakery

Organic flour, water and salt: that is the whole recipe, and everything at Domaselo is built on it. The loaves are made with stone-milled flour, leavened naturally and fermented slowly, with no industrial yeast, sugar or oil in the base bread, and they are baked daily in Miami. The house line for it is real sourdough, genuinely good for you, which is a claim about method as much as marketing. A long ferment is what gives the bread its flavour and what makes it easier to digest, Nothing in the base loaf is there to speed the process up. It is the reason this reads as a bread store rather than a café with a bread shelf.

Ten loaves off one starter

The range shows how far a single sourdough base can be pushed. Country Sourdough is the plain statement of it. From there the counter runs through Multi-Seed, Olive, Walnut & Cranberry, Cinnamon Raisin, Garlic & Sundried Tomato, Cheddar Jalapeño, High Protein, Chocolate Almond, and the Guava & Cheese loaf that is the most Miami thing in the shop. Seeded, fruit-studded, savoury, spicy and sweet-leaning versions all come off the same naturally leavened dough, which is why they read as variations rather than a scattered menu. Occasional tasting events add one-off flavours to the same base. The shop itself runs as a pickup counter with a storefront window rather than a room with tables, so bread is collected rather than lingered over.

Start with Country, then bring Guava and Cheese

Country Sourdough is the right first loaf, because it shows the base style with nothing added to hide behind. Multi-Seed gives that same foundation a seeded crumb, and High Protein is the other core loaf people come back for. Guava & Cheese is the signature to remember: a sweet-savoury filling worked into naturally leavened bread, and the loaf that makes the bakery specifically Miami's. After that, the savoury direction is Olive, Garlic & Sundried Tomato or Cheddar Jalapeño, and the sweeter one is Walnut & Cranberry, Cinnamon Raisin or Chocolate Almond. The counter also carries a few pantry additions, including organic gluten-free cereals, freshly roasted coffee and jams, but the loaves are the reason to come. One plain loaf and one filled one is the order that shows the whole range.

Frequently asked questions

What should I order first at Domaselo?

Country Sourdough, because it shows the base style with nothing added. Multi-Seed gives the same dough a seeded crumb and High Protein is the other core loaf people return for. Guava & Cheese is the signature worth remembering, a sweet-savoury filling worked into naturally leavened bread and the most Miami thing in the shop.

What goes into the bread?

Organic flour, water and salt, and nothing else in the base loaf. The flour is stone-milled, the leavening is natural and the fermentation is slow, with no industrial yeast, sugar or oil involved. Everything is baked daily in Miami, and the filled loaves are variations on that same dough rather than separate recipes.
