The bar also works with special varieties of specialty coffee roasted on site, with lots from Brazil, Ethiopia and elsewhere, so the espresso and the brewed side both have something behind them.

Coffee is the clearest specialty signal here, and the team treats it as a project rather than a fixture, travelling to coffee exhibitions and rotating what comes off the roaster.
