Working from the bean is the meaningful part, because it puts roast, blend and conching in the maker's hands rather than a supplier's, and that is what an origin tablet is supposed to demonstrate.

The house belongs to Relais Desserts, the international association of pastry chefs, which is the recognition worth knowing. It sets the register of the shop as well: elegant and classic rather than experimental, a small polished room where the product is presented like jewellery and the service happens over a counter rather than at a table.

How to approach the counter

Start with a tablet if you want to taste the chocolate on its own terms, since that is where house production shows most clearly and where the origin matters. Move to pralines when you want the traditional Belgian version of the same skill, and take macarons if you would rather see what the pastry side can do. A mixed box is the sensible way to cover all three at once.
