Every drink here starts with tea from Oyaizu Seicha in Shizuoka, a producer that has been making matcha since 1953, and the ceremonial grades it sends are named on the menu: Heavenly Sky #65 and #90. The matcha is whisked by hand rather than dosed in like a flavouring, which is the difference between this counter and most green-tea drinks in the city. Ceremonial grade is the standard rather than an upsell tier.

The founder grew up in the foothills of Mount Fuji, not far from the producer's historic base, and the house sums itself up as rooted in Shizuoka and perfected in San Francisco.

A counter, a short line, and out again

The room is compact and built for taking away. Counter service is the whole experience: you order, the drink is made in front of you, and you carry it back into the day. On a weekday afternoon the line runs out of the door and moves quickly, which tells you plainly what the format is optimised for.

This is not a laptop café or a brunch room. There is no table culture to settle into, and the design makes that clear before you have reached the front of the queue. The setting is downtown office country, and the trade reflects it: people stepping out between meetings, visitors who have walked over from Market Street, and a turnover quick enough to keep the tea moving rather than sitting.

What to order

The Ultra-Premium Matcha Latte first. It is the clearest expression of what the café is doing: Oyaizu matcha whisked by hand and poured with Straus Family Creamery barista reserve milk from Petaluma, which is why it is sold as ultra-premium rather than as another sweet green drink in a city that now has plenty of them.

The Hojicha Latte is the roasted counterpart, deeper and toastier, and the better order when grassy matcha is not what you are after. Soft serve is no afterthought either: the matcha version carries the same tea programme in frozen form, and My Milky Matcha Sky is the one to ask for. Past those, the specials run to strawberry matcha latte, strawberry matcha einspanner and white chocolate raspberry matcha, sweeter drinks built on the same tea rather than on syrup alone.
