Why go

Four espressos at a time and a rotating Brew Bar

The counter is set up for comparison: four espressos available at once, plus a Brew Bar selection that changes regularly, so a single visit can cover more than one coffee. Brew Lab works with frequently rotating single origins and treats origin, process and flavour profile as part of the order rather than small print on a bag.

Roughly four in five of the coffees come from Irish roasters, with the rest from European names, and the roasteries on the shelf include Cloud Picker, Calendar Coffee and The Barn. Staff talk about flavour notes with the precision of people who taste for a living, and the whole room is arranged to make that conversation easy. Brew Lab was named country winner in the 2025 European Coffee Trip Awards.

Stripped back, and deliberately so

The room is raw wood slab tables, tree-stump stools and concrete floors, with shelves of beans and brewing gear and awards on display behind the bar. It reads as considered rather than unfinished, and the back seating area, with music playing, is where people settle in for longer.

The layout splits between an espresso bar and the Brew Bar, so service moves at two speeds: quick milk drinks at one end, slower filter preparation at the other. The place fills up and still seems to find room for one more, which is a fair description of how a small Dublin coffee bar earns its regulars. Nothing about the fit-out is expensive, and everything in it faces the bar.

Flat white first, then the Brew Bar

Start with the flat white. It is the most specific order here and the fastest way to judge both the espresso and the milk, and it gives you a baseline before anything more exploratory.

The Brew Bar is the second move, where a rotating single origin is brewed as a pour-over and the differences in origin and process actually show themselves. Ask what is on rather than choosing blind. For food, keep it in proportion: this is coffee first, with a compact sweet counter alongside. The almond croissant is the named pastry, crisp and flaky and worth the mess, and the Peanut Butter Caramel Cup is the thing to take away for later.

Frequently asked questions

What should I order at Brew Lab?

Start with the flat white, which tests the espresso and the milk at once and gives you a baseline. Then move to the Brew Bar, where a rotating single origin is brewed as a pour-over. The almond croissant is the pastry, and the Peanut Butter Caramel Cup travels well.

Whose coffee does Brew Lab use?

Around four in five of the coffees come from Irish roasters, with the rest from notable European ones, and the names on the shelf include Cloud Picker, Calendar Coffee and The Barn. The single origins rotate frequently, so it is worth asking what is on the espresso bar that day.
