The pour-over is the point of the room: Yeo Qing He, Founder and Brewer at Apartment Coffee in Selegie, Singapore, built the studio around carefully sourced, light-roasted single-origin coffees. He won the 2018 Singapore Brewers Cup, then made the cafe less a broad service model than a place for brewing to be seen, discussed, and tasted at the counter. Apartment opened in 2018, and its current flagship on Selegie Road carries that first decision forward with a narrow field of attention. Coffee leads. The house presents itself as a coffee studio, and the work inside it follows that language: origin, roast, brew, cup, conversation. The available lineage here is not a list of named mentors or inherited stations. It is clearer in the method Yeo chose to make public, a coffee program that asks the guest to stay near the hands rather than receive the cup at a distance.
A concise menu built for origin
The menu stays deliberately small, with a handful of coffee and tea rather than a long run of signatures. Pour-over is the clearest expression of the place. Apartment Coffee’s public writing includes a guide to the Hario V60, and the room’s service has long made the brew itself visible from the guest side of the counter. The coffees named around the program come from Costa Rica, Rwanda, and Kenya, with later reporting also noting origin visits from Colombia to Rwanda. That matters because the discipline here depends on selection before extraction: which lot to buy, how lightly to roast it, how much of the finished cup should be carried by clarity rather than weight. The house also runs subscriptions and limited releases, suggesting a rotation built around coffees as they arrive, not a menu frozen for convenience. Espresso exists within the wider brand, but at Selegie the strongest published identity remains the hand-brewed cup and the single-origin menu.
White walls, wood, and a long counter
The room keeps the same restraint as the cup. At Selegie, Apartment Coffee is described through calming white walls and natural wood furnishings, a quiet edge-of-Little-India room that reads closer to a tasting room than a typical cafe. Earlier reporting on the studio’s first site noted natural light, oak tabletops, plants, a record player with vinyl, and a large shared counter running nearly the length of the room. Those details matter because they place the guest bench-side without making a performance of it. Counter service does not flatten the exchange here; it concentrates it. Sit close enough and the baristas can talk through the brew while they work, with the menu, the ceramics, and the cup all part of the same measured sequence.
Recognition without widening the frame
Apartment Coffee ranked sixth globally in the 2026 World’s 100 Best Coffee Shops list and was named Asia’s best coffee shop for 2026. The room did not have to become louder to receive the rank alone. Yeo’s program still returns to the same quiet grammar: light roast, single origin, pour-over, a counter, and a cup from Rwanda.
