Jyan Isaac Bread Opens Second Location in Silver Lake Nov. 2

The former Say Cheese space at 2800 Hyperion Avenue now has a bread date: November 2. Jyan Isaac Bread Silver Lake opens that day as the Santa Monica bakery's second permanent location and its first east side outpost, bringing Jyan Isaac Horwitz's naturally fermented sourdough, fermented bagels, pastries, and cafe food to Hyperion (Whatnow).

The move gives the bakery a second daily address after its Santa Monica flagship on Ocean Park Boulevard and the bakery on 16th and Ocean Park. It also gives Silver Lake a direct line to a business that began in 2020, when Horwitz was 19, after he lost his job on the bread team at Gjusta during the pandemic and started baking sourdough in his family's kitchen (Whatnow) (Whatnow).

The Silver Lake opening turns that production into a neighborhood counter with 22 indoor seats, 12 patio seats, and a menu centered on bread (Whatnow) (Whatnow).

Jyan Isaac Bread in Silver Lake and the Hyperion setup

The new Jyan Isaac Bread Silver Lake space is planned for 1,219 square feet indoors, with seating for 22. A 204-square-foot patio adds 12 seats outside. The Silver Lake location gives the bread a place to be cut, ordered, and eaten on site (Whatnow).

The address, 2800 Hyperion Avenue, places the bakery in Silver Lake rather than asking east side customers to cross town to Santa Monica. The former Say Cheese space is on that stretch of Hyperion, a useful piece of neighborhood memory for anyone who knows it by errands, school runs, and quick food stops (Whatnow).

The Silver Lake outpost is planned as a fuller cafe-and-restaurant concept. Jyan Isaac Bread focuses on naturally fermented sourdough, small-batch breads, bagels, pastries, and cafe food. Plans also call for alcoholic beverages to be served on-site.

City Sourdough is the first-order loaf. It is the signature loaf, made with flour, water, and natural leavening, and it is the clearest way to read the bakery's process. A fermented bagel with a cream cheese spread puts the same fermentation work in another format.

The 19-year-old baker who started in a family kitchen

When the pandemic cost him that job, he began baking sourdough in his family's kitchen and selling loaves to neighbors.

The first phase was a young baker with a home oven and a direct route to people nearby. The next phase put the bread into wider circulation, with citywide distribution and a flagship location on Ocean Park Boulevard. The Silver Lake opening adds a second permanent address to that path.

Jyan Isaac Bread opens on November 2 in Silver Lake. A bakery can begin as a pickup habit, then become a citywide distribution habit, then become a storefront routine. The Silver Lake opening gives the east side a fixed point for that production.

Horwitz worked at Gjusta. Gjusta has long been a Los Angeles reference point for bread, pastry, and cafe food built around a bakery counter. Jyan Isaac Bread comes from a founder who worked on that bread team, then had to rebuild his own work under pandemic conditions. The Silver Lake location carries that lineage into a smaller, neighborhood-scaled room on Hyperion.

Long fermentation, fresh-milled flour, and the loaf to buy first

Jyan Isaac Bread's bread program centers on naturally fermented sourdough and traditional breadmaking techniques. The bakery's approach includes fresh-milled flour and long fermentation.

The City Sourdough is made with flour, water, and natural leavening.

The supporting breads give regulars room to build a rotation. Seeded sourdough sits next to marbled rye, multigrain porridge bread, baguettes, and ciabatta.

Jyan Isaac Bread Silver Lake opens on Hyperion for customers who follow fermentation across Los Angeles. Hyperion will now have one tied to a baker whose citywide distribution already reaches across Los Angeles.

Bagels, cereal milk French toast, and cafe food around bread

The Silver Lake menu is expected to carry sourdough loaves, bagels, and other bakery items. Fermented bagels, cream cheese spreads, cereal milk French toast, and sandwiches are on the named lineup.

The first-order strategy is simple: buy City Sourdough for the table at home, then eat something built around the bakery's bread while you are there. A fermented bagel with cream cheese spread keeps the order close to the fermentation work. Cereal milk French toast brings the bread into the cafe menu.

Sandwiches make the bakery a lunch stop. The planned Silver Lake space has 22 indoor seats and 12 more on the patio, which is enough to change the pace of a visit. The seating lets customers eat bread-based meals on site.

The alcohol plan means the Hyperion location is being shaped as a place that can stretch beyond morning bread sales. The bakery remains anchored in sourdough, bagels, pastries, and cafe food.

From Ocean Park Boulevard to an east side counter

The bakery grew from Santa Monica, built demand across the city, and now moves into Silver Lake with a permanent address (Jyanisaacbread).

It is a built-out bakery and cafe space with 1,219 square feet indoors, a 204-square-foot patio, and a menu that brings the core bread program east.

At opening, the known seating plan is 22 seats inside and 12 on the patio, so the first weeks will likely feel different from buying a loaf through citywide distribution or making the Santa Monica run. Silver Lake gets a defined footprint.

For Silver Lake, the opening adds another morning destination to a neighborhood where customers already plan routes around coffee, school drop-offs, and errands. For Jyan Isaac Bread, it tests how a Santa Monica bakery with citywide distribution functions when it has to become someone's local place on Hyperion.

The bakery has a room with neighborhood recognition. The opening date gives bread buyers a clear mark on the calendar. November 2 is the opening date for the counter.
